this is one of my moms famous recipes. its always a hit at potlucks. the recipe is pretty loose! i guess it runs in the family!
1 lb green beans cleaned and chopped into about one inch pieces
1/2 red onion roughly chopped
3 cloves garlic crushed
enough olive oil and apple cider vinegar to come halfway up the beans in a shallow wide container salt and pepper to taste
mix it all together (taste it and make sure you have the oil to vinegar ratio right) and mix every once in a while to let all the beans get soaked. its really better made a day ahead.
